    Kitchen Assistant

    Key Roles & Responsibilities
    Food Preparation Support:

    • Assist in washing, peeling, chopping, and cutting ingredients.
    • Measure and prepare ingredients for the chefs and cooks.
    • Help with assembling basic food items like salads, sauces, or side dishes.

    Cleaning & Hygiene Maintenance:

    • Wash dishes, pots, pans, and kitchen utensils using manual or industrial dishwashers.
    • Clean kitchen surfaces, equipment, floors, and storage areas regularly.
    • Ensure waste is disposed of properly and bins are emptied and cleaned.

    Equipment & Supply Management:

    • Ensure all kitchen tools, cookware, and workstations are cleaned and returned to proper storage.
    • Refill kitchen supplies like soap, gloves, sponges, and disposable items.
    • Alert supervisors about damaged equipment or low inventory levels.

    Health & Safety Compliance:

    • Follow hygiene and food safety standards at all times.
    • Wear appropriate kitchen safety gear (aprons, gloves, caps).
    • Ensure raw and cooked foods are stored separately to avoid contamination.

    Kitchen Operations Support:

    • Assist with unpacking and storing kitchen deliveries.
    • Help restock fridges, shelves, and cold storage units.
    • Support chefs during busy shifts by responding quickly to instructions.

    Requirements

    • Interested candidates should possess relevant qualifications with 2 - 5 years work experience. 
    • No formal experience required, but previous work in a kitchen is an advantage.
    • Willingness to learn and work in a fast-paced kitchen environment.
    • Good hygiene practices and attention to cleanliness.
    • Ability to follow instructions and work well with a team.
    • Physical stamina to stand for long hours and lift light kitchen loads.

    Chefs

    Key Roles & Responsibilities
    Food Preparation & Cooking:

    • Prepare meals according to standardized recipes and menu specifications.
    • Cook a variety of dishes including appetizers, main courses, and sides for both club and restaurant patrons.
    • Ensure all meals are served hot, fresh, and well-presented.

    Section Responsibility:

    • Take charge of a specific kitchen section (e.g., grill, fryer, salad, pastry) as assigned.
    • Ensure all mise en place (prep work) is completed ahead of service time.
    • Maintain readiness during peak service periods and events.

    Kitchen Hygiene & Safety:

    • Adhere to proper food handling, storage, and sanitation practices.
    • Keep cooking areas clean, sanitized, and organized at all times.
    • Ensure that kitchen tools and equipment are cleaned and stored properly.

    Inventory & Waste Management:

    • Assist in checking and storing deliveries of fresh produce and kitchen supplies.
    • Monitor portion control to minimize food waste.
    • Report any spoilage, shortage, or equipment malfunction to the Head Chef.

    Team Collaboration:

    • Work closely with the Head Chef, cooks, and service staff to ensure coordinated food service.
    • Support colleagues during busy shifts or when switching between the restaurant and club service.
    • Be flexible to assist with banquet setups, buffets, or themed club nights.

    Compliance & Consistency:

    • Follow recipes, plating standards, and dietary requirements strictly.
    • Maintain consistency in taste, texture, and presentation of all dishes.
    • Stay updated with health and safety regulations and company kitchen standards.

    Requirements

    • Experience as a cook or chef in a club, restaurant, or hotel kitchen.
    • Knowledge of a variety of local and international cuisines.
    • Ability to work quickly and efficiently in a high-pressure environment.
    • Good communication and time-management skills.
    • Culinary certification or training is an added advantage.

    Cook

    Responsibilities
    Food Preparation & Cooking:

    • Prepare ingredients and cook meals as per the menu, recipes, and portion control guidelines.
    • Handle breakfast, lunch, dinner, or late-night orders, depending on shift schedule.
    • Cook items on the grill, fryer, oven, or stove as assigned.

    Plating & Presentation:

    • Plate dishes with attention to detail and visual appeal.
    • Ensure consistency in taste, texture, temperature, and appearance.
    • Double-check orders before sending out to waitstaff or dispatch.

    Kitchen Cleanliness & Hygiene:

    • Maintain a clean, organized, and sanitized workstation at all times.
    • Follow all food safety regulations and hygiene standards.
    • Wash utensils and equipment used during prep and cooking.

    Inventory & Stock Support:

    • Monitor stock levels of ingredients and report shortages to the Head Chef or kitchen supervisor.
    • Properly label and store food to avoid spoilage or cross-contamination.
    • Assist in receiving and storing kitchen deliveries.

    Teamwork & Coordination:

    • Work closely with fellow cooks, grillers, and service staff to ensure timely order completion.
    • Assist in other sections of the kitchen when required during peak hours.
    • Communicate effectively to maintain smooth kitchen operations.

    Compliance & Safety:

    • Operate kitchen equipment safely and responsibly.
    • Use protective wear (gloves, aprons, caps) and follow all health codes.
    • Report accidents, hazards, or equipment malfunctions immediately.

    Requirements

    • Proven experience as a cook in a restaurant, club, or hospitality kitchen.
    • Knowledge of food preparation techniques and various cooking methods.
    • Ability to work under pressure and multitask during busy shifts.
    • Understanding of food hygiene and kitchen safety practices.
    • Physical stamina and ability to stand for long periods.
    • Culinary training or certification is an added advantage.
