    Head Chef

    Job Description

    Our client is a luxury 5-star hotel located in Kano, with over 18 years’ experience in the hospitality industry in Nigeria. They currently have an opening for an Head Chef to be based in Kano State Nigeria.

    Job Summary

    The Head Chef is responsible for all food production, menu development, food purchase specifications and standardized recipes. he/she is also responsible for maintaining the highest professional food quality and hygiene standards through out the food production process in the hotel.

    Key Responsibilities

    • The Head chef schedules and coordinates the work of the chefs, cooks and other kitchen employees to ensure that food preparation is economical, technically correct and within budgeted cost.
    • Evaluates food products to ensure that the hotel quality standards are consistently attained.
    • Projects annual food, labor and other costs and monitors actual financial results and takes corrective action as necessary to ensure that the financial targets are met. 
    • Develops standard recipes and techniques for food preparation and presentation which help to assure consistently high quality.
    • Implements measures to minimize food costs, exercise s portion control for all items served and works with the food & beverage manager in establishing menu selling prices.
    • Interacts with the food & beverage department to ensure that food production consistently meets or exceeds the expectation of guests. 
    • Research and implement new culinary trends.
    • Delegate daily tasks to sous chef and other kitchen staff; manage their progress throughout the day.
    • Must be great with variety of dishes ( e.g a la carte, buffet and oriental) 

    Key Requirements

    • Proven 3-4 years Executive Chef Experience in a  4-5 Star Hotel.
    • Great attention to detail and creativity
    • MUST be proficient in the use of Opera and Micros
    • Must be willing to relocate to Kano State in Nigeria.
    • Excellent time management and organizational skills
    • Willingness to replenish professional knowledge
    • In depth knowledge of sanitation principles, food preparation and baking techniques and nutrition
    • Communication, dexterity, creativity and leadership skills
    • Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
    • Culinary Arts degree and/or other culinary certification
    • Vast knowledge in culinary arts, including any new up and coming food trends.
    • Expert skills and experience planning, designing, and preparing meals

    Sous Chef - Nigerian Cuisine (buffet)

    Job Description

    Our client is a luxury 5-star hotel located in Kano, with over 18 years’ experience in the hospitality industry in Nigeria. They currently have an opening for a Sous Chef- Nigerian cuisine (buffet) to be based in Kano.

    Job Summary

    We are looking for a professional Sous Chef- Nigerian cuisine (buffet) willing to work within Kano. As a Sous Chef, your expertise in recipe development elevates our menus while your leadership inspires and fosters our Culinary talent.The successful candidate will employ its culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers’ satisfaction.

    Key Responsibilities

    Reporting to the Executive Chef, responsibilities and essential job functions include but are not limited to the following:            

    • Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues
    • Manage all Kitchens in the absence of the Executive Chef
    • Create all food menus with the guidance of the Executive Chef
    • Complete daily market lists to ensure quality food ordering while maintaining budgeted costs
    • Meet with Storekeepers to ensure quality & par levels are maintained
    • Interact closely with the Catering department to assist in function menu co-ordination and meet with  clients as required
    • Conduct daily shift briefings with all Sous Chefs
    • Ensure all kitchen Colleagues are aware of standards and expectations
    • Liaise daily with Outlet Managers and Sous Chefs to keep open lines of communication regarding guest feedback
    • Balance operational, administrative and Colleague needs
    • Ensure proper staffing and scheduling in accordance to productivity guidelines
    • Follow kitchen policies, procedures and service standards
    • Follow all safety and sanitation policies when handling food and beverage
    • Plan the food design in order to create a perfect match between the dish’s aspect and its taste;
    • Train the auxiliary kitchen staff in order to provide best results in minimum time and using at the maximum the available resources;
    • Create tasting menus for customers interested in contracting the food for different events (wedding, banquets, corporate dinners, birthday parties, etc.)from their kitchen;
    • Must be great with variety of dishes (e.g Nigerian cuisine)
    • Comply with nutrition and sanitation regulations and safety standards
    • Maintain a positive and professional approach with coworkers and customers
    • Other duties as assigned

    Requirements

    • Proven 4-5 years 4/5 Star Hotel relevant work experience as Sous Chef
    • Great attention to detail and creativity
    • MUST be proficient in the use of Opera and Micros
    • Must be willing to work within Kano.
    • Organizing and leadership skills
    • Willingness to replenish professional knowledge
    • Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
    • Previous leadership experience in the culinary field required
    • Diploma Certification in a Culinary discipline an asset

    Salary: Negotiable
