    Bakery Production Manager

    About the Role

    • We are seeking a highly skilled and experienced Bakery Production Manager to oversee the full production operations of our kitchen.
    • This role covers cakes, pastries, desserts, and ice cream production.
    • The ideal candidate is hands-on, creative, highly organised, and able to maintain consistency, quality, and efficiency in a fast-paced premium café environment.

    Key Responsibilities

    • Oversee daily bakery, pastry, dessert, and ice cream production
    • Plan and manage production schedules to meet daily café demand and events
    • Develop and standardise recipes to ensure consistency in taste, texture, and presentation
    • Maintain high-quality control across all products leaving the kitchen
    • Manage inventory of baking ingredients, dairy, and dessert supplies
    • Reduce waste and ensure cost efficiency in production
    • Supervise bakers, pastry assistants, and kitchen staff
    • Train staff on techniques, plating, hygiene, and production standards
    • Ensure strict hygiene and food safety compliance (HACCP-level standards)
    • Innovate and introduce new seasonal desserts, cakes, and ice cream flavours
    • Work closely with management on menu development and pricing feasibility
    • Ensure timely production for walk-in customers, pre-orders, and events.

    Requirements

    • Minimum 3–5 years experience in a bakery/pastry/dessert production role (managerial or senior level preferred)
    • Strong expertise in:
      • Cakes (custom, celebration, slices)
      • Pastries (croissants, doughnuts, etc.)
      • Desserts (cheesecakes, mousses, plated desserts)
      • Ice cream production (preferred or willingness to learn quickly)
      • Strong leadership and team management skills
      • Excellent understanding of portion control, costing, and food pricing
      • Ability to work under pressure and meet daily production deadlines
      • High attention to detail and consistency
      • Creativity in product development and presentation
      • Knowledge of hygiene and kitchen safety standards.
