    Head of Culinary Operations

    Location: Airport, Ikeja, Lagos

    Job Summary

    • We are seeking dynamic and results-oriented individuals to join the team of our client, a major player in the International Aviation Catering Services Industry.
    • This position requires a seasoned culinary professional with a deep understanding of large-scale food production, menu planning, kitchen management, and team leadership in a high-volume catering or hospitality environment.

    Key Responsibilities

    • Lead and manage the culinary operations across Hot Kitchen departments.
    • Oversee menu planning, recipe development, and production schedules to meet airline and client standards.
    • Ensure strict compliance with food safety, hygiene, and HACCP protocols.
    • Manage kitchen budgets, food cost control, inventory, and waste reduction.
    • Build, mentor, and inspire high-performing culinary teams to achieve consistent operational excellence.
    • Collaborate with Operations, Quality Assurance, and Flight Management teams to ensure timely, quality service delivery.
    • Drive innovation, operational efficiency, and continuous improvement initiatives.
    • Represent the culinary department during audits, client meetings, and operational reviews.

    Requirements

    • Degree or Diploma in Culinary Arts, Food Production, or Hospitality Management.
    • Minimum of 8 - 10 years’ experience in a senior culinary management role within airline catering, 5-star hotels, or large-scale catering operations.
    • Strong knowledge of international culinary standards and food safety systems (HACCP, ISO, etc.).
    • Excellent leadership, communication, and organizational skills.
    • Proven ability to manage high-pressure environments while maintaining top-tier food quality.
