    Senior Cook

    Job Summary

    • We are seeking a reliable and experienced Cook to prepare nutritious, high-quality meals for our clients.
    • The successful candidate will be responsible for timely meal preparation, maintaining kitchen hygiene, managing food stock, and ensuring consistent quality and portion control.

    Key Responsibilities
    Meal Preparation & Timeliness:

    • Prepare meals on schedule:
      • Breakfast ready by 7:00 AM
      • Lunch ready by 1:00 PM
      • Dinner ready by 5:00 PM
    • Cook meals for large numbers of clients.
    • Ensure food is well-cooked, nutritious, and tastes good.
    • Follow standard measurements to maintain consistent taste.
    • Ensure equal portion sizes for all clients.

    Standardisation & Quality Control:

    • Develop and follow standardised recipes.
    • Maintain standard units of measurement to ensure uniform taste and portion control.
    • Control portions to prevent overuse or waste of ingredients.
    • Monitor food quality before meals are served.

    Buying & Cost Control:

    • Visit the market when required to:
      • Ensure correct food items are purchased.
      • Confirm prices are reasonable.
      • Select good-quality food items.
    • Work with the Accounts team to:
      • Understand the cost of preparing each meal.
      • Ensure spending stays within the approved amount per client/meal.
      • Reduce and prevent food waste.

    Stock & Record Keeping:

    • Record all items taken from the store in the stock book.
    • Record new supplies received.
    • Monitor remaining stock levels.
    • Inform management in advance when items are running low.
    • Use the First In, First Out (FIFO) method for stock rotation.
    • Check expiry dates regularly.

    Cleanliness & Safety:

    • Maintain a clean and organised kitchen at all times.
    • Clean all cooking equipment after use.
    • Ensure the kitchen is thoroughly cleaned at the end of each shift.
    • Store food properly and safely.
    • Follow all hygiene and food safety regulations.
    • Dispose of waste correctly.

    Additional Responsibilities:

    • Assist with menu planning.
    • Suggest ways to reduce food costs.
    • Report any broken or faulty equipment.
    • Ensure refrigerators and freezers are working properly.
    • Support special dietary requirements for clients when needed.
    • Cooperate with management during inspections or audits.

    Working Hours & Flexibility:

    • The Cook may be required to work longer hours during busy periods or special events such as:

      • Christmas celebrations
      • Public holidays
      • Special institutional events
      • Client fasting periods or special diet preparations
      • Emergency situations
    • The Cook must be flexible and willing to adjust working hours when necessary to ensure all meals are prepared and served on time.
    • The Cook may also be required to prepare special menus during festive seasons or for clients with specific dietary needs.
