Responsibilities

• Design specialized African menus featuring regional dishes (e.g., West, East, or North African cuisine).
• Standardize traditional recipes for consistent taste, portion size, and visual presentation.
• Adapt traditional recipes for hotel banquets, room service, and fine-dining restaurant settings.
• Source authentic local ingredients, spices, and fresh produce from trusted regional vendors.
• Oversee daily mise en place (the preparation and organization of ingredients before cooking).
• Taste and inspect every dish before it leaves the kitchen to meet high hotel standards.
• Coordinate food production timing with other kitchen sections and front-of-house staff.
• Handle special guest dietary requirements or cultural food requests
• Monitor stock levels and manage food inventory disbursement to reduce waste.
• Order fresh local staples and dry goods while staying within allocated budget costs.
• Supervise junior kitchen staff, line cooks, and kitchen assistants.
• Train kitchen team members in traditional African cooking techniques and hygiene protocols.
• Ensure full compliance with local health codes and food safety regulations.
• Maintain strict cleanliness across all food storage, preparation, and cooking stations.
• Monitor equipment condition and request timely maintenance or repairs.
