• Adhering to all cost control procedures.
• Updating costings.
• F&B revenue and cost audits.
• Reviews purchasing procedures for all F&B items.
• Ensures compliance with documentation/authorisation processes.
• Processes Food & Liquor accruals.
• hiring and training of kitchen staff
