Key Responsibilities
Raw Material Handling & Storage:

• Receive and inspect raw cocoa beans upon delivery
• Weigh, record, and store beans in appropriate storage containers/sacks
• Monitor bean conditions (moisture, pests, contamination) regularly
• Maintain a clean and organized storage area

Roasting:

• Set up and operate the cocoa bean roasting equipment
• Monitor roasting time, temperature, and bean condition for consistency
• Cool and transfer beans efficiently post-roast
• Keep detailed roasting records

Cracking & Winnowing:

• Operate machines that crack roasted beans and separate nibs from husks
• Ensure efficient yield of clean nibs with minimal wastage
• Troubleshoot blockages or mechanical issues with cracking/winnowing equipment
• Clean and maintain equipment regularly

Cocoa Butter Pressing:

• Set up and operate the cocoa butter press machine
• Monitor pressure and temperature during pressing to ensure quality yield
• Safely collect cocoa butter and press cake
• Maintain hygiene standards during handling and collection
• Clean and lubricate press equipment as needed

General Duties:

• Follow standard operating procedures (SOPs) and food safety guidelines
• Assist in cleaning work areas, tools, and machines
• Support production team in inventory and reporting tasks
• Report issues with machines or materials to the supervisor promptly

Person Specification
Education & Experience:

• Minimum HND technical or vocational training in food processing, machinery, or related field is a plus
• 1–2 years of experience operating machinery in a food production or agricultural processing environment preferred
• Familiarity with cocoa or chocolate production is an added advantage

Skills & Competencies:

• Mechanically inclined and comfortable operating factory equipment
• Ability to follow detailed instructions and quality standards
• Good record-keeping and basic math skills (for weights, temperatures, etc.)
• Strong attention to detail and cleanliness
• Physically fit and able to lift or move heavy loads (up to 65kg)
• Good team spirit and strong sense of responsibility
• Willingness to learn and grow within a small, artisan-focused team

Working Conditions:

• Work involves exposure to heat, dust, and noise from roasting and pressing machines
• Must wear protective clothing (gloves, masks, overalls, etc.)
• Factory shifts may include early mornings or weekends depending on production schedule
• Training on machines and safety procedures will be provided.
