    Sous Chef

    GENERAL JOB DESCRIPTION

    Sous Chef is responsible for providing supportive leadership to kitchen staff throughout food service. Their duties include assisting the Head Chef in monitoring kitchen activities, expediting orders to ensure quality taste or presentation and taking on additional responsibilities in the Head Chef’s absence to ensure that kitchen staff has proper direction.

    DUTIES & RESPONSIBILITIES

    • Preparing meals and food to meet the specifications of guests in a timely manner
    • Properly measuring kitchen ingredients and food portions
    • Ensuring kitchen staff adhere to set standards, procedures, department rules and sanitation requirements
    • Using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation
    • Managing the kitchen inventory and ensuring supplies are fresh and of high quality
    • Ensuring proper food temperatures when cooking and proper storage afterward
    • Keeping the workstation and kitchen equipment clean, organized and sanitized

    Senior Kitchen Assistant

     

    GENERAL JOB DESCRIPTION

    A kitchen assistant is a staff member who aids in the overall function of a culinary workspace. The majority of their duties are supplementary to other roles within the work area. Assistants work with both cooks and supervisors, ensuring that all functions within the kitchen work effectively.

    DUTIES & RESPONSIBILITIES

    • Keeping the kitchen clean: Join the rest of the team to ensure the kitchen is kept always clean
    • Measuring ingredients: Ensures the other chefs have all the necessary ingredients to create their dishes.
    • Preparing and cooking food: Follow the chef’s instructions and perform various food-related tasks. This might involve peeling and dicing vegetables, marinating meats and cooking various components of dishes
    • Rotating stock and inventory management: Assesses inventory and requests resupply when necessary, Controlling and rotating stock and to know exactly what ingredients are available in the kitchen and their expiration date. This rotation reduces the chance that food will go to waste and ensures ingredients are in the best condition when they're needed for use.
    • Helping with deliveries: There's a place for everything in a professional kitchen, so the kitchen assistant will work with the kitchen stewards to unpack the stock carefully and put every item where it should be with proper labelling. This task helps the Chef understand what items the kitchen needs on a daily or weekly, and which item are more seasonal. It also provides insight into the business side of the kitchen.
    • Monitors kitchen equipment and reports issues to superiors

    EDUCATION & TRAINING

    • HND Certificate or Culinary school certificate

    Cost Controller

    GENERAL JOB DESCRIPTION

    The Cost Controller is in-charge of total cost and assets. Will monitor operations of the food and beverages department, Housekeeping, Facilities and main stores to ensure proper cost control is maintained. In order to help management to maintain a strict adherence to corporate budget while finding ways to increase company profits. Also support the Finance Manager in developing financial report.

    DUTIES & RESPONSIBILITIES

    • The Cost Controller will work alongside relevant account officers in overseeing the cost control function for Peniel Apartments.
    • Would analyze each department’s ordering and consumption patterns, and closely monitoring them to ensure that they adhere to the agreed budgets, costing and standards.
    • Will monitor the performance of all departments, particularly food and beverage and housekeeping operations efficiently.
    • Liaising with the purchasing team, as well as chefs, Food and Beverage Executive and Rooms division manager to ensure accurate costing for all operations.
    • Organize the asset controlling systems.
    • Organize the store and receiving systems. 
    • Should be actively involved in inventories and stock takings.
    • Manage F&B, Housekeeping, store and Facilities department cost functions.
    • Keep Track record of all cost issues in all departments.
    • Develop cost report for Finance Manager and relevant departments concerned.
    • Support cost information for all concern departments upon request.
    • Ensures requisition from every unit posted from store is classified into the right GLCOS in Sage accounting sage.
    • conducting regular audits of F&B inventory books to identify variances and discrepancies.
    • collaborating with the F&B team to implement cost-saving measures and optimize menu pricing.
    • complementary meal analysis and revenue report.
    • Preparing monthly financial performance review reports and cost analysis for management review.
    • Preparing and forecasting yearly F&B sales budget-

    EDUCATION & TRAINING

    At least a bachelor's degree in Accounting, Economics, Statistics or another related field.

    KNOWLEDGE & EXPERIENCE

    • At least 5 - 7 years managerial experience in similar role

    SKILLS & ABILITIES

    • Solid experience in star class hospitality environment/service apartments.
    • Previous experience in Food and Beverage and other operational departments from a similar establishment is preferred.
    • Familiar with hospitality accounting as well as operations.
    • Ability to work flexible hours.
    • Strong and confident personality coupled with the ability to work as part of a team.
    • Good Knowledge of and experience with accounting and purchasing software.
    • Good interpersonal skills
    • Ability to communicate clearly and concisely.
    • Analytical and driven to initiate new ideas or plans.
    • Must possess an organized and methodical approach.
    • A high level of accuracy and attention to detail.
    • Good time management for meeting strict deadlines

    Executiver Driver

    GENERAL JOB DESCRIPTION

    Safely transporting persons or products and materials to and from specified locations in a timely manner. Assisting with the loading and offloading of luggage, products, and materials. Adjusting travel routes to avoid traffic congestion or road construction.

    DUTIES & RESPONSIBILITIES

    • Drive vehicles safely, following the highway code, considering road and weather conditions and being courteous to other drivers
    • Appear well groomed, representing the company in a professional manner
    • Deliver assigned vehicle on schedule to an agreed location
    • Return collected vehicles to base completing the necessary paperwork
    • Provide customer service to the guests.
    • Travel independently between jobs, returning to base as instructed if no suitable local collection.

    • Observing and complying with FRSC

    • Ideally previous experience of high mileage driving within a professional environment.
    • Ideally experience of driving different makes and models of vehicles including prestige.
    • Hold a current Valid Driving License and ideally have an advanced driving qualification.
    • Basic knowledge of car maintenance.

    • Good FCT geography covering towns and road network.
